I resisted getting one because I don't have storage space and was a little afraid of how often I'd use it (the two most likely options being never, and way, way too much).

I haven't been to Bacon. Yet. I certainly agree letting anybody else do the cooking is the easiest fix for the situation. That said, I used organic chicken from a local outfit and the best way to know where my proteins come from and how they were handled is to source my own.

And truly. This chicken was seriously crunchy and moist, just as promised.TexasDebhttps://www.blogger.com/profile/11214888876514137890noreply@blogger.comtag:blogger.com,1999:blog-3859291696897577217.post-31690253963320265472012-07-06T11:23:57.132-05:002012-07-06T11:23:57.132-05:00"I say initially shortened the cooking time i..."I say initially shortened the cooking time involved because as I fine-tuned my technique, the chicken strips became such a family favorite that leftovers became a requirement. Soon it was routine for me to make double or even triple batches to assure a sufficient surplus. My time spent standing around bubbling vats of hot oil expanded past the point it would be offset by my love for family. Home fried chicken went back off the menu."

This just about sums up my experience with chicken tenders too! I love the folksy people of America's Test Kitchen and their scientific explanation of how to cook.

I cheated a bit and bought a fryer so I wouldn't have to stand over the oil anymore. But even that has proved too much for a typical day. Maybe in honor of National Fried Chicken Day I could pull that puppy out. Or maybe just head over to Bacon. They have the most amazing fried chicken served over a big ol' Texas sized waffle (with bacon in it, of course).Cathttps://www.blogger.com/profile/03872899189875117518noreply@blogger.com
